INGREDIENTS
- 1 vegan egg of your choice (I used applesauce)
- 90g sugar
- 3 tsp green matcha
- 200g flour
- 80g vegan butter
Toppings: pumpkin seed or almond.
PREPARATION
- In a bowl, mix the egg with the sugar and green matcha.
- Keep stirring.
- Add the flour as you go and mix. Stir in the butter and knead to form a ball.
- Wrap it in plastic wrap and refrigerate for 10 to 15 minutes. Meanwhile, preheat your oven to 350°.
- Take your dough out of the refrigerator, spread it on a work surface about 5 mm thick and cut out cookies.
- Bake for 15 minutes. Let cool!
